1 c. all purpose flour
2 tsp. baking powder
1/4 tsp salt
2 Tbsp granulated white sugar
1 large egg, lightly beaten
1 c. milk (i used 1/2 c. skim, 1/2 c. whole milk)
2 Tbsp butter, melted
Whisk together dry ingredients in large bowl. Combine egg, milk & melted butter. Add wet ingredients to the dry. Stir for no more than 10 seconds. Batter should be lumpy.
Heat a frying pan or griddle over medium heat until a few sprinkles of water dropped on the pan/griddle splatter. Using a small ladle or scoop, pour 1/4 cup of batter onto the pan/griddle, spacing them a few inches from each other. hen the bottoms of the pancakes are brown and bubbles start to appear on the top surfaces of the pancakes, turn over. Cook until lightly browned.
Repeat with remaining batter. Makes six 3″ pancakes.
